3-4 medium sweet potatoes (peeled and sliced into 1/4 inch to 1/2 inch slices)
3 Tbsp butter
1 tsp salt
1/2 tsp pepper
Directions
- Preheat oven to 350°.
- Place butter in a microwave safe dish and microwave for approx 30-45 seconds until butter is melted. Add 1 tsp salt and 1/2 tsp pepper and stir into butter.
- Place potatoes in a single layer on a sheet pan lined with parchment paper.
- Using a silicone basting pastry brush, brush butter mixture onto each potato.
- Place in the oven for 20 minutes and then flip each potato and brush the other side with any remaining butter mixture. Cook for an additional 20 minutes or until potatoes are tender and browning.
