1 pound chicken breast cut into strips (can do less meat based on how many people are eating)
1 pound steak cut into strips ((can do less meat based on how many people are eating)
1/4 cup plus additional 2 Tbsp lime juice
Olive or Avocado Oil (approx 1/4-1/2 cup)
Fajita seasoning to taste
2 Tbsp butter
Directions
- A few hours before cooking: place 1 pound chicken cut into strips and 1 pound steak cut into strips into separate bowls with lid. Pour oil onto meat just enough to coat it and pour 1/8 cup lime juice onto meat in each container as well. Place lid on and shake to cover meat with liquids. Sprinkle fajita seasoning over meat and then replace lids again and shake to coat. Place in refrigerator for 3-4 hours to marinate.
- Preheat oven to 400°.
- Line 2 sheet pans (1 for chicken and 1 for steak) with foil and then place parchment paper over the foil. (I do this part for easier clean up)
- Place the chicken and steak onto separate pans and sprinkle a little more fajita seasoning over the meats.
- Place chicken pan in the oven for 13 minutes. After 13 minutes, leave the chicken in the oven and add the steak pan to the oven as well. Cook for an additional 8 minutes. (21 minutes total for the chicken and 8 minutes for the steak).
- While the meat is cooking I like to saute onions (diced or sliced) on the stovetop, I saute them in a skillet with 2 Tbsp butter, 2 Tbsp olive or avocado oil, 2 Tbsp lime juice and 1/4 Tbsp fajita seasoning.
- Once everything is finished, serve over tortilla chips or on tortillas with your favorite toppings (sour cream, salsa, queso, tomatoes, cheese, etc.).
