Instant Pot Mashed Potatoes

2-2.5 pounds potatoes (peeled and chopped into 4-6 pieces per potato)
3 Tbsp butter
4 ounces cream cheese
1/2 cup milk
1/4 cup sour cream
Salt and pepper to taste
2 cups water
Directions
- Place 2-2.5 pounds potatoes into instant pot. Sprike with a little bit of salt and add 2 cups water.
- Secure lid on instant pot and make sure it is set to the seal position.
- Set to high pressure for 8 minutes. It will take 10-15 minutes for the instant pot to come up to pressure before the 8 minute countdown begins.
- Once the timer goes off, do a pressure release by moving the valve from the seal position to the vent position (be careful to stand back as the steam will be very hot).
- Once it is finished, remove the lid and use a collander to drain the water off the potatoes and then return the potatoes to the pot.
- In a microwave safe dish, add 3 Tbsp butter, 4 ounces cream cheese, 1/2 cup milk and 1/4 cup sour cream and microwave 30-45 seconds (so that it melts easier into the potatoes)
- Pour this mixture over the potatoes. Use a potato hand masher or an electric handheld mixer to mash the potatoes and mix it all together. (I like my potatoes more whipped, so I do the hand mixer)
- Add salt and pepper to taste and stir. (You can also add garlic salt or garlic powder if desired)
